Texas Cottage Pie

INGREDIENTS

·      1lb 1 Steer® Grass Fed Ground Beef from Nurture Ranch

·      1 tablespoon olive oil

·      1 large yellow onion, chopped

·      1 tbs garlic powder

·     1 oz organic instant gravy powder

·      1 cup organic beef stock

·      1 organic diced tomatoes

·      1 tsp basil

·      1 tsp oregano

·      4 dashes of sea salt

·      4 large russet potatoes

·      1/3 stick of Kerry Gold Grass Fed Butter

·      1/2 cup organic milk

·      1/4 cup grated organic cheddar cheese

·      Organic Sour Cream

·      1 organic chopped chive

·      1 organic chopped jalapeño

DIRECTIONS

Preheat oven to 200°C/180°C fan-forced. Heat olive oil in a non-stick frying pan over medium-high heat. Cook ground until browned. Transfer to a bowl. Add onion and garlic to pan. Cook, stirring, for 3 minutes or until softened.

Return ground beef to pan. Add gravy powder. Cook, stirring, for 1 minute. Stir in stock and tomato. Bring to the boil. Reduce heat to medium-low. Simmer, stirring occasionally, for 25 to 30 minutes or until thickened.

While simmering, cook potato in a saucepan of boiling, sea salted water for 10 to 12 minutes or until tender. Drain and return to pan set to low heat. Mash until smooth. Add grass fed butter, we recommend Kerry Gold and organic milk. Stir until butter has melted and mixture is combined.

Spoon ground beef mixture into a casserole dish. Top with potato mixture. Sprinkle with cheese and seas salt. Bake for 20 to 25 minutes or until golden.

Top with dollop of sour cream, chives and jalapeños.
